Malt, slight citrus, cracked pepper

SECOND COURSE
-Sunchoke
Pickled Mustard Seed, Frisée, Pickled Apple, Celery Root Puree, Shaved Halva
-Sherry Cask
Dried prunes, fig, sherry and vanilla notes

THIRD COURSE
-Brioche Crusted Halibut
Paddlefish Caviar, White Turnip Puree, Cauliflower
-Rum Cask
Coffee, toast and chocolate aromas, dry finish.

FOURTH COURSE
-Strip Loin
Castelfranco Radicchio, Onion Soubise, Asparagus Tips, Charred Onion Petals, Black Garlic Purée, Pea Tendrils, Bordelaise Sauce
-Irish IPA Cask
Mildly hoppy with sweet spicy undertones

FIFTH COURSE
-Whiskey & Honey
Whipped Chocolate and Whiskey Mousse, Burnt Honey Cream, Spiced Pound Cake, Vanilla Ice Cream, Chocolate Curl
-Port Cask
Dried fruit with nutmeg and black pepper, vanilla and toffee
